Metro fills the front section of the Nxt Museum, which means you can chase robot art with shrimp croquetas, or skip the art entirely like most of Noord seems to. It is a big concrete warehouse room made friendly with Bruno Rey chairs, mirrors and a bakery counter stacked with sourdough by mid-morning. Xander Waller of Entrepot runs it with chef Rients de Jong, formerly of Restaurant As, and the kitchen keeps things seasonal and unfussy: kohlrabi in brown butter with lovage sabayon, monkfish with San Marzano sauce vierge, a côte de boeuf for two when you are feeling flush. Three courses from €41 keeps the bill honest. The wine list leans natural without being preachy about it, with plenty by the glass. Packed since it opened in December 2022, so book, or grab the concrete bar and watch the open kitchen.
