Waterlandplein is not where guidebooks send you, which is exactly why the ice cream is this good. De IJspraktijk sits on the shopping square next to the Aldi, churning everything in-house every morning since 2019 and selling it the same day. The classics are present and correct, but the fun is the specials board: drop for the Dutch, dawet for the Surinamese aunties, yoghurt baklava, lime basil, even guacamole when the makers feel chaotic. Regulars put in requests and the kitchen actually honours them, which is how half these flavours were born. Culy ranked it among the city's five best salons back in 2020, and Noord has treated it as its own ever since. Three scoops cost about a fiver, there are milkshakes and croissants for the undecided, and the name is a pun on a doctor's practice. Consider it your prescription.
The custom flavours rotate constantly, so ask what came out of the machine that morning; dawet goes fast on warm afternoons. Hours shift with the season, expect early afternoon to late evening.
