
Mama Makan
Indonesian dinner at the Hyatt Regency's restaurant in the Plantage, with a €39 rijsttafel in regular and vegan versions and mains off a yakitori barbecue.
Mama Makan is the restaurant of the Hyatt Regency Amsterdam in the Plantage, with its own entrance on Spinozastraat. It opened with the hotel in 2017 under head chef Paul Verheul, with Rosmina, an Indonesian cook, in the kitchen; today the chef is Sebastian Sebau. In 2018 Your Little Black Book called the rijsttafel "definitely the most recommended" order. It serves dinner only. Every main goes over a yakitori barbecue, from a €20 Satay Selection of beef, chicken thigh, oyster mushroom and tofu to a 300-gram Angus rump steak tongseng at €47, and there is a three-course menu at €55. The rijsttafel costs €39 a head, either with ayam asam, semur daging and prawn serundeng, or as a vegan set with jackfruit curry, semur tempeh and Padang tofu satay. Guests are divided. They praise friendly, quick service; a recurring complaint is small portions for €39, and several find the food too bland. On Google it holds 4.2 from more than 800 reviews.
The kitchen is open daily from 17.30 to 21.45 and the bar from 11.00 to midnight. With the rijsttafel you can add satay, one skewer at a time or a set of four for €12.
