Kamer
The old Café de Parel reborn as a 32-seat grill and natural wine room that already feels inevitable.
For decades this was Cafe de Parel, the Westerstraat brown cafe, and the room still has the old tiles and wood to prove it. Since late 2025 it is Kamer, 32 seats around an open kitchen where Irish chef Ciaran Patrick Naughter, who cooked at 4850 and Sebonsa, grills his way through a short menu of plates portioned to be shared by two. Justin Grooten runs the floor and a wine list that is all natural and low intervention, poured with actual opinions. The cooking is comfort with sharp edges: smoked pork neck in reduced broth, butterflied quail with shrimp fudge, a korenwijn canele with oscietra caviar that has no business being on a menu this small. Barts Boekje filed it under hip and happening within weeks. It feels like dinner at someone's house where the host happens to cook better than most restaurants. Book, or call for last minute stools.
