Chez Chloé
New French restaurant on the Overtoom from the Bar Kartel owner, with turbot on the bone for two and a 59-page French wine list.
Matthijs van Stapele ran Bar Kartel at Overtoom 28 from 2020; on 2 April 2026 he reopened the space as Chez Chloé. Chef Marcelo Hernandez was born in Amsterdam and trained in classic French cooking under Jan-Willem Teunis. The menu opens with oysters at €5 or €7 and a bavette tartare with sauce gribiche and crisp sweetbread (€23). A menu de saison of two, three or four courses costs €45, €55 or €75. The big plates are for sharing: turbot on the bone for two (€70) or a Black Angus rib-eye with béarnaise (€88). Sommelier Tim Palacios, previously at CUE, put together a 59-page list of French wines, including bottles from foreign winemakers who settled in France. The halibut with yuzu kosho and the stuffed morels from the opening months are no longer on the menu. In April 2026 Track & Trees found the turbot perfectly cooked and called the place “comfort fine dining”; Wieke Veenboer of The Blue Note singled out the shared rib-eye that month.
Online bookings take up to eight people; for nine or more, email the restaurant. The whole place can be hired for up to 54.
