The pistachio wave found its best Amsterdam address, and it happens to be vegan.

Amsterdam caught the global pistachio fever, and SAINT-JEAN on the Lindengracht is where it landed best: a cruffin, croissant dough baked as a muffin, filled with house-made pistachio paste and dusted with sugar. The whole bakery is vegan and you would never guess it from the lamination. Saturdays the queue merges with the Lindengracht market and the cruffins sell out; on weekdays it is a short, happy line of people who know exactly what they came for. Go early, buy two, and accept that one will not survive the walk.
